Do convection ovens heat food faster?Yes, fans circulate the heat and you'll get a better and more consistant bake.

How can you prevent fruits from sinking to the bottom of cakes?
If you gently roll the fruit in a
little bit of flour, it will prevent it from sinking in the batter.


How do you prevent a cheese cake from cracking during the baking process?
If you bake it in a water bath, (warm water up to 1/2 of your cake pan) inside another pan it will bake your cheesecake slower and more even. If you don't, then your cake will pretend it's like a souffle and rise and crack when it falls.

When mixing scones, is it better to do it by hand or with a mixer?
The less mixing the more moist and soft the scone will be. Machine mixers tend to make them a little rougher.

Raspberry Pot de Creme
3 oz bittersweet chocolate
4 cups heavy cream
Teaspoon salt
6 yokes
1/2 cup sugar
1/2 cup cream
1/2 cup raspberries

Chop chocolate in bowl, heat cream til scalded. Pour over the chocolate. Wisk yokes with 1/2 cup of sugar. Temper - Mix the yok mixture with the hot chocolate quickly and stir until the mixture is velvety smooth and coats the back of the spoon. Pour into ramkins or bakeable bowls 300 degrees until mostly set and just a little jiggily in center. Chill. Whip some cream with sugar and vanilla. Top pots with raspberries, tier whipped cream. Makes approximately 6. Remember to save so for later.
